Fish sauce & 5 spices salmon: 30 minutes

Delicious roasted salmon with a slightly Asian taste. Very fast recipe. I usually like salmon to be prepared medium, even medium rare; it would mean 15 minute roasting for this recipe. 5 spices is a chinese condiment mix that normally is made of grounded fennel, cloves, cinnamon, star anis and Szechuan pepper. If you like spicy food, you can add chilly to the fish sauce. Enjoy! 

4 salmon file
one piece of ginger  (aprox 2 cm), chopped + 1 small red onion +  3 garlic cloves + 3 cherry tomatoes + 2-3 tbsp fish sauce + juice from 1/2 lemon + 2-3 tbsp sesame oil 
optional: chilly powder
1/2 - 1 tsp 5 spices
Wash the fish file and pat dry on absorbant paper.
In a blender mix the ginger, onion, garlic, tomatoes, fish sauce, lemon juice, sesame oil and chilli, if using. Put the fish file in a baking dish, pour the ginger cream and rub the fish with it.
Powder the fish with a little 5 spices and bak ein the oven for 15 minutes (medium rare) or 18-20 minutes (well done).
Serve the salmon with rice and the sauce in left in the pan.
